The Brisket Cheesesteak If you ever find yourself having leftover brisket (trust me, I have plenty!) then here’s an idea for what to do with it. That sauce is a Mexican flavoured cheese and beer sauce and it bangs! Watch until the end for a classic Elky outtake This was cooked on my @Masterbuilt 800 using the griddle at around 200c. Effortless! Anyway, here’s the recipe… Fry some onions and peppers then set aside to keep warm. I used one of the Masterbuilt shelves above the heat. Add the brisket to the griddle, heat through then add your favourite BBQ seasoning. I’ve gone with @Spanglish Asadero Chile de Arbol to give this dish a Mexican edge. Add some beef stock to keep that brisket nice and juicy! Once hot, set aside and keep warm Cheese sauce next. Make a roux by melting 4tbsp of butter then mixing on 4tbsp flour. Slowly add in around 400ml of milk, stirring constantly. Add a tablespoon of Dijon mustard followed by around 100ml of beer. I’ve poured a pint of Stella from my @perfectdraftuk but don’t worry, the rest didn’t go to waste! Next, I’ve added Spanglish Chipotle seasoning, half a jar of chopped pickled jalapenos and 350g mature cheddar cheese. Stir until it’s all melted and the cheese sauce is nice and smooth Take a small baguette, slice open, add plastic cheese, brisket, onions & peppers then that gorgeous cheese & beer sauce. All that’s left is to chuck this glorious mess into your gob, washed down with the rest of that ice cold pint!
