Goat Shawarma with Coal Roasted Chilli Sauce Wow, this was a bit of alright! Fired cooked goat shawarma, cooked in my braai from The Braaiman. Beautiful oak splits from @Love Logs providing the fire for this cook. I can stare at that fire all day and night, it’s just so mesmerising! Anyway, here’s the recipe… Goat Shawarma 3kg goat (I used belly and shoulder) 1tbsp cumin seeds 2tsp black peppercorns 2tsp fenugreek seeds 6 cloves 1/4tsp cardamom 2tsp sumac 1tsp cinnamon 1tsp ground ginger 2 lemons, zest & juice 4tbsp olive oil 2tsp salt Grind the whole spices then mix with the rest of the ingredients. Slap the marinade all over the goat then thread the goat on to the rotisserie. This was cooked over a decent fire for around 2 hours Coal Roasted Chilli Sauce 2 onions 2 carrots 1 bulb garlic 1 red pepper 4 red chillies 1 lemon 400g chopped tomatoes 2tbsp honey 2tbsp cider vinegar Salt & pepper Cook the onions, carrots, garlic, pepper and chillies in the coals. The chillies and peppers don’t need long. Remove and cover with cling film to help with scraping the charred skin off. The onions, carrots and garlic are done when they feel soft. Peel everything then blend. Add to a saucepan along with the tomatoes, honey, cider vinegar, salt & pepper. Char the lemon and squeeze this in too. Cook in the coals until bubbling then remove and cool Slice the shawarma and serve in a wrap or flatbread with the chilli sauce and some sriracha mayo. Chuck some veggies or salad in too, if that’s your thing!
