Pulled Pork & Crackling?! These pork hocks cost me £1 each. Yep, £1! Normally £3 each but they were reduced. I’ve kept it really simple. Dry & score the skin then apply your favourite rub. I’ve used @Spanglish Asadero Al Pastor rub on these. Then cook indirect at 150c – I’ve used my @Kamado Joe Classic 3 with some apple wood for smoke. Once the internal temperature hits 92c, remove the deflectors, crank up the heat and get that crackling blistering! Remove and tear in to these bad boys!
