Mexican Chicken Pizza! So me and Paul from @Love Logs had a play with my @amigo_ovens Premium Wood Fired Oven last week and I made this. Been thinking of it for a while and while it will definitely upset the pizza purists, I think it’s a winner! I knocked up a simple salsa base using onion, peppers, garlic, chopped tomatoes and @Spanglish Asadero Ancho Chilli rub then set it aside to cool. Chicken thigh was coated with Chipotle rub then cooked in the oven over the embers and again, allowed to cool. Paul taught me all about dough, making it from scratch, how to handle it and how to shape it. I don’t think I did too badly once I got the hang of it. Once I shaped the dough, on went the salsa, fior di latte cheese, spicy chili cheese, chicken & jalapenos. Once out of the oven, it was topped with nachos and then devoured! It wasn’t perfect but with a couple of small tweaks, this will be a winner! We cooked so many pizzas last week and using the @amigo_ovens oven was an absolute joy.
