Amigo Wood Fired Sunday Roast! I’m absolutely in love with my Amigo Ovens Premium wood fired oven. It’s such a joy to cook in with enough space to cook a whole roast dinner. I’ve gone with roast ex-dairy beef fillet with a pepper crust. And the roast potatoes out of this oven are the best roast potatoes you’ll eat! Pepper crusted beef 2tbsp black peppercorns 1tsp pink peppercorns 1tsp Szechuan peppercorns 1tbsp coriander seeds 1tbsp cumin seeds 1tsp paprika 1tsp garlic powder 1tbsp salt Grind to a course rub, coat the beef with mustard then apply plenty of the pepper rub. Cook the beef to 50c then allow to rest for 30 minutes. It’ll end up a perfect medium rare Roast potatoes Par-boil some maris piper spuds for 8 minutes then drain. Rough them up slightly then add to hot goose fat along with salt, pepper and rosemary. Cook for around 40 minutes in a hot oven, turning half way through My oven is fuelled by beech splits from @Love Logs. Simply the best and most eco-friendly fire wood around!
