The Peanut Butter & Jam Burger Here’s my take on a PBJ burger. Pork patties, peanut satay sauce and red onion & chilli jam. And I tell you what, this was magnificent. Why not give it a try? Recipe below… Onion & Chilli Jam 3tbsp rapeseed oil 3 red onions, sliced 3 red chillies, sliced 1tsp garlic powder 75g dark brown sugar 100ml red wine vinegar Salt & pepper Cook the onions in the oil for 8-10 minutes until soft. Add the chillies and garlic powder half way through. Use salt to help bring out the moisture from the onions. Add the sugar, cook for a minute or two then add the red wine vinegar. Cook for another 10-15 minutes until you have a glorious sticky mess Peanut Satay Sauce 6tbsp peanut butter 200ml coconut milk 1tsp chilli flakes 1tsp coriander 2tbsp dark soy sauce 2tbsp fish sauce 80g crushed dry roasted nuts Juice of half a lime Mix all ingredients together apart from the lime and nuts. Stir over a medium heat until it all comes together and thickens nicely. Add the nuts, squeeze in the lime then remove from the heat For the burger @stpierreeurope seeded brioche buns, lightly toasted Sriracha mayo on bottom bun Pork patties with 20% fat, smashed, seasoned then topped with chilli cheese slices. Peanut sauce Onion jam This was all cooked on the @Masterbuilt 800 using the griddle.
