π Temperature: Place the vegetables on the perforated plate in the Borniak at approx. 140 Β°C.
π Smoking chips: Alder shavings or cherry shavings are suitable for this purpose.
πThe pepper must turn BLACK from all sides. πThis takes about 45 – 60 minutesπ.
When the eggplant is soft, halve and scrape with a spoon and place in a blender.
Cut off the root of the garlic and simply squeeze into the mixing container. Cover the black peppers with a damp cloth and let cool. Now the shell can be easily removed. Add the skinned peppers to the other ingredients in the blender container. Blend finely with a blender, add olive oil until a cream is formed. Season with salt and pepper.
If you like goat’s cheese π§, smoke it at 30 Β°C and crumble it into the cream.
