Massaman Roast Chicken As many of you will know, I absolutely love Thai food. If I could only eat one cuisine for the rest of my days, it would be Thai. So, I’d not had a roast chicken for ages but we also fancied Thai so I knocked up this beautiful Massaman Roast Chicken in my @Amigo Outdoor Living Premium Wood Fired Oven I’ve used my extremely handy @Thermapen DOT to monitor the temperature throughout the cook, meaning I don’t have to keep pulling the chicken from the oven to check the temperature. Honestly, the DOT is a superb little gadget to have. Then when the DOT alarm sounds, I use the @thermapen One to spot check a few places, making sure the breast is 73c all over and the legs & thighs are over 80c. Honestly, I’m not sure what I’d do without these essential tools! Anyway, I’ve made a massaman curry powder and paste from scratch, slapped that on the chicken then added some new potatoes half way through the cook. At the end of the cook, with the chicken resting, I’ve added more paste to the pan with the potatoes, some coconut milk, fish sauce, tamarind and sugar to create a well balanced massaman curry sauce. Here’s the ingredients for my curry paste… 1tbsp fennel seeds 15 cardamom pods, seeded once toasted 1tbsp coriander seeds 1tbsp black peppercorns 1 cinnamon stick 6 dried chillies, roughly chopped 2 lemongrass stalks, thinly sliced 1 red onion, finely diced 2” piece ginger, thinly sliced 6 garlic cloves, roughly chopped Gently toast the whole spices, blend then add to a blender along with some pan toasted fresh ingredients and some oil.
