Hot & Fast Cherry Smoked Brisket This bad boy weighed 10kg before trimming. Once trimmed, it was rubbed with 2 parts pepper, 1 part salt before going in the @Masterbuilt 800. I cook my briskets at 150c, wrapping once the bark is set. Plenty of cherry wood in there for the smoke. The total cook time was 6 hours and I knew it was done because my @Thermapen just slipped all the way through it when dropped. The final temperature was 98c which is quite high but I know these briskets can take it!
