Beans On Toast! Not the quick and easy version by any stretch but well worth the time spent by the fire cooking these banging pit beans! Here’s the recipe… 200g streak bacon, diced 1 onion, finely diced 1 red pepper, finely diced 2tbsp tomato puree 3 garlic gloves, finely chopped 2tsp cumin 2tsp paprika 1tsp chilli flakes 1/2tsp cayenne pepper 1 tin chopped tomatoes 500ml chicken stock 3 tins of beans (I used cannellini, kidney and borlotti) 200ml BBQ sauce 60g brown sugar 2tbsp cider vinegar Salt & pepper to taste Render the bacon then remove and set aside. Cook the onion and pepper until soft then add the garlic, cook for a minute then do the same with the tomato puree. Add the spices shortly followed by the rest of the ingredients. Simmer for 45 minutes to an hour or until your desired consistency. Serve on toasted ciabatta, with some cheese if you’re feeling extra naughty. Also makes a great side dish for any BBQ.
