Cheese & Brisket Stuffed Jackets With A Cheese, Jalapeno & Beer Sauce I’m not going to lie, these were pretty epic. I had some leftover brisket and this idea came to me while in the shower, as do all of my best ideas! I’ve cooked the spuds at around 220c in my @Amigo Outdoor Living Premium Wood Fired Oven. Then remove the potato and add to a bowl with some leftover brisket and loads of cheddar cheese. Mix well then stuff back into the potato skin and back for another 15 minutes. Meanwhile, make the beer and cheese sauce. Make a roux with butter and flour and then slowly add beer. Keep stirring in beer until you have a nice thick sauce then add some mustard powder, garlic powder, paprika, diced pickled jalapenos, salt, pepper and plenty of cheddar cheese. Add to the top of the potatoes along with some panko breadcrumbs and bake for another 5 minutes. Remove, top with picked jalapenos and dig in.
