The first ever cook on my new offset smoker – The Leviathan Pits Fractal 90 What better way to start than straight in at the deep end with a Wagyu X brisket?! And yes, I loved every minute of it. Getting to grips with fire management, temperature control, the different ways a brisket cooks compared to a Kamado. This mighty fine brisket from Philip Warren Butchers was trimmed then rubbed with salt and pepper before being cooked over oak. Temps were between 250f (121c) and 275f (135c) throughout the 12 hour cook. The brisket was wrapped once the bark was set, the moisture had been expelled and the fat was rendering, around 80c. It came off around 93c, with the entire brisket probing nice and tender. It was then wrapped in cling film and hot held in my Masterbuilt XT at around 70c for 12 hours before being sliced, sampled and vac sealed for some lucky friends and family! Ok, we may have had some for breakfast and dinner too! Yesterday was a great day. Lots learnt. Today was even better, I got to eat the brisket. And I have to say, the Leviathan is an absolute beast.
