Tacos al pastor If you’ve not had these before then this is your sign to get out and make them! These were soooo good! And cooking over fire this way adds a nice subtle smokey flavour and is just much more fun than cooking indoors! I absolutely love using my @Somerset Grill Co. It’s so versatile, so many different ways to cook. I’ve used the rotisserie today, cooking this pork shoulder alongside a nice fire, while also scraping the embers under the pork to help too. I’ve then used the rear grill grates to char some pineapple, glazed with Tubby Toms Yeti Chilli Honey & lime juice which I’ve added to the tacos All of my fire wood is from @Love Logs, as well as charcoal, smoking wood, firelighters etc. They are my one stop shop for all things fuel and fire Anyway, here’s the recipe .. Ingredients 3kg thinly sliced pork shoulder (freeze slightly to make slicing easier) 2 guajillo chillies (all chillies soaked in warm water then de-seeded) 2 cascabel chillies 2 pasilla chillies 60ml orange juice 60ml lime juice 1 onion 1tbsp cinnamon 1tbsp oregano 1tbsp cumin 70g achiote paste 2tsp salt 1tbsp black pepper Blend everything then marinade the pork shoulder, ideally overnight. Add all pork to the rotisserie spit then cook until the internal temperature hits 70c. Thinly slice and serve To serve Small tortillas, lightly grilled Pineapple, peeled and sliced then cooked, glazing with chilli honey & lime juice. Then finely diced Finely diced white onion Chopped coriander Slices of lime @Tubby Tom Taco Drip Sauce Enjoy! #tacosalpastor #tacos #taco #bbq #firecooking #asado #ukbbq #thesmokinelk
