Smoked Over The Top Chilli One of my favourite ways to cook chilli. Take your favourite chilli recipe and make the sauce but leave the meat out. Roll the meat into balls and sit them on a grill grate above the sauce. Throw some wood in for some smoke and let the meat take on a cracking smokey flavour for 90 minutes to 2 hours at around 150c. Stick the meat into the sauce, simmer for an hour and there you go, over the top smoked chilli. Here’s the recipe for my simple smoked chilli… Ingredients 500g beef mince 500g pork mince 1 large onion, finely diced 1tbsp garlic puree 2tbsp tomato puree 400g chopped tomatoes 400g passata 500ml beef stock 2tbsp cumin 2tbsp paprika 4tsp oregano 2 chipotle chillies in adobo sauce Salt & pepper for seasoning Sugar for balance The method is in the Reel.
