Sausage and Bean Casserole With the colder days and darker nights drawing in, it’s time for comfort food! And this dish typifies autumn food for me, especially when cooked over fire. I’ve fired up my braai from The Braaiman for this cook, it’s always such a joy to cook on. Here’s the recipe… 200g streak bacon, diced 1 onion, finely diced 1 red pepper, finely diced 2tbsp tomato puree 3 garlic gloves, finely chopped 1kg sausages (I’ve gone with cheddar & jalapeno sausages from @Sosij_uk 2tbsp @Tubby Tom Magic Dust or 2tsp cumin, 2tsp paprika, 1tsp chilli flakes, 1/2tsp cayenne pepper 1 tin chopped tomatoes 500ml chicken stock 4 tins of beans (I used cannellini, kidney and borlotti) 100ml @matthew burgess Sweet Chilli & Soy sauce 60g brown sugar 2tbsp cider vinegar Salt & pepper to taste Render and crisp up the bacon then cook the onion and pepper until soft. Add the garlic, cook for a minute then do the same with the tomato puree. Add the rub shortly followed by the rest of the ingredients. Simmer for 45 minutes to an hour or until the bans reach your desired consistency. While this is happening, I’ve slowly cooked the sausages on a grill high above the fire until they are almost done then sliced and added into the beans Serve this with a load of mash and enjoy! #sausages #casserole #sausageandbeans #comfortfood #autumnfood #stew #firecooking #ukbbq #thesmokinelk
