Peri-Peri Chicken There’s been quite the culture war going on in the comments section of a few of my vids lately. Some from people who are very protective about their food traditions, others from clueless trolls. Either way, it’s been good to see some of the fierce debate! This leads me on to Peri-Peri saice. Who invented it first? @Nando’s UK & Ireland ? The Portuguese? Or the Mozambicans? Either way, this is a mighty fine creation and one of my favourite flavours on chicken. Here’s my recipe for the marinade… Juice of 3 lemons 100ml white vinegar 100ml olive oil 6 garlic cloves 3tbsp smoked paprika 1tsp onion powder 1tsp cumin 1tsp oregano 1 red pepper 1tbsp salt 10 bird’s-eye chillies Blend it up and slap it over your chicken. Reserve some for basting and even heating for a sauce to serve This chicken was spun over charcoal on my @Kamado Joe Joetisserie basket. And it was absolutely stunning!
