How To Cook The Perfect Steak Over Fire I really fancied a nice big fat tomahawk steak and decided to cook this one over fire. Here’s the steps I take to ensure juicy steak perfection when cooking on the @Somerset Grill Co Asado 1. Use good quality, dry firewood. Mines from @Love Logs 2. Build two fires, a main one for the initial heat and a feeder fire for the coals 3. Pat the surface of the steak dry. A wet steak is a miserable steak 4. Season well with salt. You want to pack on plenty of seasoning as each bite will only have around 5% of seasoned steak so make sure that bite is seasoned well! 5. Start cooking the steak at a good distance from the fire. You want the heat to gently cook the steak, you don’t want any flame touching the steak at this point. Turn regularly to ensure it’s cooking evenly 6. Once the steak hits 45c drag any hot coals in to position under the steak then lower the grill grate 7. Sear the steak, turning regularly until the internal temperature hits 54c 8. Remove and rest the steak for 15 minutes. The temperature will rise to around 58c – 59c which is closer to medium but is perfect for a fatty steak like this one from @philipwarrenbutchers. 9. Slice, season with pepper and enjoy!
