Have you ever cooked with a Thor’s Hammer? Otherwise known as beef shin, this cut is just perfect for cooking low and slow until all that connective tissue and intramuscular fat breaks down. It’s even better in something like a chilli because the bone marrow melts into it, giving you this rich, unctuous and damn naughty chilli! Here’s what’s gone into mine… 2kg bone in beef shin 2tbsp oil 2tbsp chilli powder 2tsp garlic powder 2tsp onion powder 1tsp oregano 2tsp cumin 2tsp paprika 1/2tsp cayenne 180g tomato puree 400g chopped tomatoes 1l beef stock (plus more if needed) Salt & pepper @spanglishasadero_official Chili de Arbol rub Squeeze of honey Season the beef with the rub. Add a Dutch oven to some heat, add the oil then stir in the chilli powder for 30 seconds. Next, add the tomato puree and cook for 5 minutes to reduce the bitterness. Add in the remaining ingredients and simmer. While it’s simmering, add a couple of wood chunks to the fire for some smoke then sit the beef shin over the sauce. After 2 hours, submerge the shin into the sauce, cover and continue cooking for another 4 hours, until the meat is soft enough to shred easily. I’ve served mine with nachos, cheese and pickled chillies. An absolute winner! This was cooked on my @kamadojoeuk Classic 3 with the temp nice and steady at 140c throughout #chilli #beefshin #bbq #ukbbq #thesmokinelk
