At many BBQ championships, the brisket is one of the supreme disciplines among grillers. The brisket corresponds to the core of the boned side of a beef brisket, consisting of the so-called flat, the pectoralis muscle, and the point, the supraspinatus muscle. Both muscles are separated by a layer of fat, the so-called fat cap, which stretches across the entire flat. The point is the much smaller part of the brisket and sits on top of the flat.
