Ingredients For the Chicken bites – 400g Chicken breast, cut into bite size pieces 1 tsp Old bay seasoning 1/2 tsp each of the following – onion granules, garlic granules, ground black pepper, smoked paprika, oregano For dredging – 1 Large egg, beaten – add 1 tsp hot sauce 2 cups Cornflakes, crushed For the Honey BBQ glaze – 1 tbsp Unsalted Butter 1 cup BBQ sauce 1/2 cup Honey 20ml Water Method Step 1 – In a bowl, add the chicken pieces and all of the seasonings listed. Mix well to coat. Step 2 – Take a piece of chicken, dip it in the egg and then the cornflakes mixture, Pat them in well and set aside. Continue with the remaining chicken pieces. Step 3 – Set your air fryer to 190c, and spray the tray with a little oil. Place the chicken bites in a single layer. Cook for 12 minutes, turning half way through. Once the cooking cycle is complete, check the chicken is cooked through with a meat thermometer. Step 4 – When the chicken has 5 minutes left- In a pan, on low heat, add the butter, once melted, add the bbq sauce and stir, then add the water and honey. Stir to combine. Simmer for 2 minutes. If you would like to loosen it up a little more, add a tbsp of water. Remove from the heat and set aside. Step 4- Dip the chicken bites in the sauce or glaze with a brush! Serve immediately.
