Tandoori Pork Belly, Bombay Potatoes and Masala Onion Gravy One of my favourite cooks this year. I love cooking over fire on my @Somerset Grill Co so when I received my new tapa accessory, I just had to fire it up. The tapa helps to trap in the heat from underneath, similar to an oven, resulting in a quicker cook without losing all of that valuable heat. This beautiful pork belly took around 3.5 hours. Perfect crispy crackling, juicy and tender meat. Simply sublime I’ve served it alongside some Bombay potatoes and some masala onion gravy. A delight of a cook, a delight of a meal. The Bombay potatoes were simply par boiled then added to hot oil with mustard seeds, cumin seeds, turmeric, chilli powder, salt and curry leaves. Here are the ingredients for the masala gravy… 2tbsp butter 5tbsp plain flour 1 large red onion, thinly sliced 2 cloves of garlic, bashed 1tsp cumin seeds 1tsp coriander seeds 1 stick cinnamon 2 bay leaves 500ml chicken stock 1tbsp light soy sauce 1tbsp dark soy sauce 1tbsp balsamic vinegar 1tsp garam masala The pork belly was simply season with a tandoori spice blend on the underside and just salt on the skin side Winner #somersetgrill #asado #porkbelly #sundayroast #roastpork #firecooking #tandoori #bombaypotatoes #ukbbq #thesmokinelk
