Is it cottage pie season already? Feels like it after a beautiful month of sun. Regardless, I think it should be cottage pie season all year round. Here’s how I made this one in my beautiful @Amigo Outdoor Living Premium Wood Fired Oven Ingredients 1.5kg beef mince 2 onions, finely diced 2 carrots, finely diced 2 celery sticks, finely diced 2 garlic cloves, crushed 3 tbsp flour 1 tbsp tomato puree 1 large glass of red wine 750ml beef stock 4 tbsp Worcestershire sauce A few thyme sprigs 2 bay leaves Salt & pepper 2.5kg potatoes 200ml milk 75g butter 200g cheddar Salt & pepper Brown the mince then remove and cook down the veggies in the remaining fat. Once softened, add the garlic, cook for a minute before adding the tomato puree and cooking for another minute. Stir in the flour then add the beef back to the pan followed by the red wine. Cook on high heat until the wine reduces by half. Add the beef stock, worcestershire sauce, thyme, bay leaves, salt and pepper then simmer for 35 minutes or until the mixture has thickened to desired consistency While simmering, get some potatoes in a pot of salted water and gently boil for 20 minutes until soft. Drain then mash with the butter & milk before stirring in the cheese, salt & pepper. Add the mince to a baking pan then spoon over the mash, topping with a bit more cheese.
